Hoppin John Salad

Ingredients
12 oz of Hormel 96% fat free diced Ham1.5 cup of Cole Slaw Mix2 medium Celery stalks (chopped)1/2 cup of Red Onion (or 1/2 a medium sized chopped)4 cups Black Eyed Peas, (approx 2 cans drained)4 cups Whole Grain Brown Rice, (or brown minute rice)DRESSING;4 tbsp Red Wine Vinegar2 tbsp Vegetable Oil2 tsp Hot Sauce2 tsp minced garlic1 tsp salt
Directions
Prepare rice prior to starting remainder of dish. While cooking rice prepare the dressing with red wine vinegar, vegetable oil, hot sauce, minced garlic and salt. Set aside to add later.

Place slaw mix in a large skillet with olive oil. Toss on medium to high heat for only a minute. If you want cabbage softer heat until it begins to wilt. Pour into bowl.

Add chopped celery, chopped onion & hot rice.

Heat black eyed peas & ham in mocrowave for 3 minute or untill heated thoroughly.
