Decadent Corn Chowder

Ingredients

* 3/4 cup chopped onion * 3 tablespoons unsalted butter or margarine * 3 tablespoons soy flour or white flour * 3 cups diced peeled potato * 3 cups water * 3 cubes chicken bouillon * 3 cups fresh or frozen corn * 1 tablespoon finely chopped jalapeno or green chilies * 6 cups skim milk * 1 teaspoon garlic, crushed * 1/2 teaspoon pepper * 3 dashes paprika
In a medium saucepan, saute onion in butter until tender.
Stir in flour.
Add the potato, water and bouillon; bring to a boil.
Reduce heat; cover and simmer for 7-10 minutes or until potato is tender.
Add corn, jalapeno, milk and seasonings.
Cover and simmer for 15 minutes. Enjoy!
