Vegetarian Tofu Fried Rice

Ingredients
1 oz Red onion1 oz Pea Shoots1/2 c. frozen corn2 c. brown rice, cooked1/2 T. butter1/1 T. olive oil1/4 c. Low-Sodium Soy Sauce
Directions
Cut tofu into bite-sized pieces and chop vegetables as well (I like everything chopped into bite-size pieces except the pea pods.)

Melt 1/4 T. butter in work, add tofu and stir fry about 5 minutes

Melt 1/4 T. butter and add eggs, scramble with tofu

Add broccoli, pea pods, and carrots, drizzle on olive oil and stir fry 3 - 5 minutes

Add rice, red onion, and pea shoots and combine.

Pour on soy sauce 1 T at a time, stirring between each addition, to taste.
