Blackbean Salsa Soup - Slowcooker!

Ingredients
Beans, black, 2 cups Veggie or Beef broth, bouillon, consomme, 2 cups Yogurt, plain, skim milk, 2/3 cup Milk, 1%, 2/3 cup Salsa, 1 cup *Cumin seed, 1 tbsp Onions, raw, 1 large Garlic, 3 clove Chili powder, 2 tbsp Pepper, red or cayenne, 1 tbsp Yellow Sweet Corn, Frozen, 2 cup kernels Cilantro, dried, 4 tbspLime juice, 1/8 cup
Directions
Soak 1 bag (2 cups) dry Black beans for 6-8 hours. Cook for 1 hour, do not let the beans split.

Mash or food process half of the beans after cooking with 2/3 cup plain yogurt and 2/3 cup 1% Milk. Put remaining beans into slow cooker.

Add to the slowcooker 2 cups of beef broth, 1/8 cup lime juice. 4tbsp cilantro, 3 cloves of garlic mashed or pureed. 1 large onion (processed finely). 1 tbs Cumin. 1 tbs crushed red pepper. 2 tbs Chili powder. 1-2 cups of Salsa. 2 cups of frozen, fresh or canned sweet corn.

Slow cook on medium (not high!) for 4 hours. Serve with plain yogurt, reduced fat cheddar cheese and salsa.

This receipe is also good with a side of Tomato, Mozzarella Cheese, Olive Oil, Garlic bread!!! YUMMY!!!
