Blueberry Bran Muffins

Ingredients
2 cups all purpose flour1 tablespoon baking soda1/2 teaspoon coarse salt2 large eggs4 tablespoons maple syrup1/2 cup sugar1/2 cup vegetable oil (or safflower)1 1/2 cups milk (whole)1 cup fresh or frozen blueberries (I used frozen)1/2 cup wheat bran
Directions
1. Preheat the oven to 400 degrees F. Grease a standard 12 cup muffin tin, or line with muffins. (Have on hand an extra small cake pan or mini loaf pan in case of extra batter.)

2. In a large bowl, whisk together the flour, baking soda, and salt Separately beat together the eggs, maple syrup, sugar, oil and milk. Stir the egg mixture into the flour mixture. Stir the berries and the bran. (Gently or the batter will turn blue. Although, this isn't really a problem!) Fill the muffin cups three-quarters full.

3. Bake for 25 minutes, or until golden brown. Cool for 5 minutes in the pan before removing.

Serve plain, on the go for breakfast, or spread with your favorite jam or preserve for an extra treat.

    This sounds good and I love bran muffins, however I'd use splenda instead of sugar because it would cut down on calories. - 1/8/10

    You know, I'm honestly not a fan of Splenda, because of the chemical processing it goes through. I try to avoid processed sugars in general, but this was a last ditch effort to get the man to eat breakfast!
