Coconut Bread

Ingredients
Coconut Flour 3/4 CupButter, melted 1/2 cupeggs 6Honey 2 Tblsp.Salt 1/2 tsp.Baking Powder 1 tsp.
Directions
Blend together eggs, butter honey and salt. Combine coconut flour with the baking powder and whisk thoroughly into egg batter until no lumps remain.

Bake in a 9x 5 greased loaf pan for 30-40 mins.

    I liked this. It has a heavier texture, and the coconut is not too overpowering. I can't have dairy either, so I switched to margarine. I think next time I make this I am going to try making them in little muffin tins, the outer crust is the best part. The kids did not like it.... - 1/13/10
