Simple Spiced Chai

Black tea--four bags or four teaspoons of any loose black tea leaves you fancy4 Cups cold waterMilk, 2 % 2 cupsCardamom, 6-10 pods, lightly crushed, or 1 scant tablespoon groundCinnamon, 2-4 sticks or 2 teaspoons groundGinger, 1 tsp ground or 1 very small knob grated fresh gingerFreshly ground black pepper, 1 generous tspCloves, 6-10 whole or 1 scant tsp groundSugar to tasteOptional additions: about 1/4 tsp vanilla extract, lemon zest, orange zest
In a medium saucepan or pot, combine the milk and water. Bring to a gentle boil at medium-high heat. The milk and water is very prone to bubbling over, so it must be watched, but need not be stirred.
Once the mixture is boiling, turn off the heat and add the tea and spices, whisking or stirring the entire time. If the chai shows any signs of boiling over, remove it from the heat until it has calmed down, then return it to the warm burner.
Let the tea and spices steep for at least five minutes, until the chai turns a caramelly color, then ladle out individual servings. Add sugar to taste and enjoy.

Very nice recipe. I did wind up adding a teaspoon of sugar after making the whole thing without, so I'm glad to find out that you already considered that with the nutritional information! Will play with the spices as something seems a bit too strong, but I'll be making this again at some point! - 9/16/14

How much milk do you use? I have had it in a tea house, homemade with no dairy at all, wonderful.

Sorry, I meant to say that I put in 2 cups of milk.
I also like to use unflavored rice milk, which has a nutty, slightly oily (but not in a bad way) flavor when added to hot liquid.
