Crockpot Chicken with White Beans

Ingredients
4 - boneless, skinless chicken breasts (frozen)1 - can fire roasted tomatoes, undrained1 - can white beans, drained and rinsed1 - fresh red bell pepper, chopped1 - tsp dried basil
Directions
Place frozen chicken in crockpot. Sprinkle with basil. Layer red bell peppers, beans, and tomatoes over. Cook on low 6-8 hours.

Great served over brown rice or whole wheat pasta.

    Good, put it all in the crockpot first thing this AM and it cooked WAY down - may have to boost something - the peppers cooked completely down - couldn't tell they were in there! Added some garlic and pesto for seasoning as well - as stated before can be modified! Good starter. - 10/18/10

    This was a really easy, nutritious and low-fat meal. I think next time I might add some more flavorful vegetables though. The recipe itself is a little bland but the nice thing about it is that it's flexible. - 10/12/10
