Better than Burger Burgers

Ingredients
1/2 c uncooked brown rice1/2 cup uncooked bulgar1 tbsp mrs. dash1/4 tsp poultry seasoning2 c water2 c FINELY chopped fresh mushrooms3/4 c old fashioned oats1 c part skim mozzarella, shredded1/4 c reduced fat cheddar cheese, shredded1/3 c finely chopped onion1/2 c fat free cottage cheese1/4 cupegg substitute2 tbsp minced fresh parsley or 1 tbsp dried parsley1 tsp sea salt1/2 tsp dried basil1/8 tsp celery seed3 tsp canola oil, divided
Directions
1. Combine first 5 ingredients in saucepan, bring to boil. Reduce heat, cover, and simmer for 30 minutes. Remove from heat and cool. Transfer to bowl and refrigerate for 30 minutes.

2. Combine next 5 ingredients in a large bowl. With a hand blender or food processor mix cottage cheese and egg sub until smooth. Add mixture to mushroom and oat mix. Stir in parsley, salt,basil, celery seed, and chilled rice mixture. Shape 1/2 cupfuls into patties.

3. In a large non stick skillet, cook four patties in 1 tsp of oil for 3-5 minutes on each side or until brown. Repeat with remaining patties and oil.

Serve on rolls with lettuce and tomato.
