Herb Roasted Chicken Breast

1/2 cup shallots, minced1/4 cup balsamic vinegar1/2 cup olive oil1/4 cup lemon juice1/3 cup brown mustard1 cup fresh parsley, chopped1 tsp crushed red pepper flakes6 boneless chicken breast halves
Combine the shallots, vinegar, olive oil, lemon juice, mustard, parsley and red pepper in a bowl and mix well. Placer the chicken in a large shallow dish. Pour the marinade over the chicken, turning to coat.
Marinate, covered in the refrigerator for 1 hour or longer, turning occasionally. Drain the chicken, discarding the marinade. Place the chicken in a roasting pan and season with salt and pepper. Roast at 450 for 45 minutes or until meat registers 165 F with a meat thermometer.
