Apple Walnut Banana Bread

1 1/4 c. sugar1 stick margarine1/2 c. eggbeaters1/2 c. soymilk or skim milk3 medium bananas, mashed1 tsp vanilla2 c. flour1/2 c whole wheat or graham flour1 tsp salt1 tsp baking soda2 medium apples, peeled and chopped1c chopped walnuts
Heat oven to 350 degrees.
Cream margarine and sugar in mixer. Add eggs until well blended. Mash bananas with fork, and add to mixture. Mix in vanilla and soy milk.
Mix dry ingredients in a separate bowl, then mix with wet ingredients just until blended. Stir in apples and walnuts.
Pour into two greased loaf pans. Bake at 350 degrees for 45 minutes to an hour, or until a toothpick inserted into the middle comes out clean.

wow- I completely forgot them in the ingredient list! It's been corrected. Please do try it; I modified this from a Betty Crocker recipe, and it's pretty good.
