Oven Baked Sweet Potato Fries

2 1/2 pounds, raw sweet potatoes3 Tbsp. olive oil1 tsp sea salt
Preheat oven to 425 degrees, or 400 degrees on convection bake.
Wash and cut sweet potatoes into shortened strips, as you would a french fry.
Place in a large glass bowl, toss olive oil and sea salt onto potatoes, stir until the potatoes are coated in with the olive oil.
Cover with plastic wrap, and cook in a microwave on high for 5 minutes, stir, recover and cook another 4 minutes on high. Remove from bowl, and place on a baking sheet in one layer.
Bake in oven for 25 minutes, remove, carefully turn fries over on baking sheet and bake another 20 minutes. Watch them toward the end so that they won't burn.
Yield: 6 servings, about 2 oz each
