Combine chicken, celery, bell pepper and onion in a large saucepan and brown over medium heat. Drain excess liquid. Return to stovetop and add garlic, habanero and jalapeno; cook for 2 minutes, stirring constantly. Add remaining ingredients and bring to a boil. Cover and simmer over low heat for 30-40 minutes, stirring every 5-10 minutes. Serve with shredded cheddar cheese and a dollop of sour cream, if desired.
