Lentil Soup with Spicy Italian Sausage

Ingredients
Italian Sausage, pork, 1lb (can use turkey)Onions, raw, 1 cup, chopped Celery, raw, 2 cup, diced Carrots, raw, 2 cup, choppedOlive Oil, 1 tbspSpinach, fresh, 4 cupdried lentils, 2 cupChicken Broth, 3 L (12 cups)*Mc Cormick Italian Herb Seasoning, 2 tbspsalt and pepper to taste
Directions
1. crumble and brown sausage
2. remove from pan
3. add onions, carrots and celery to pan and saute until tender
4. add italian seasoning
5. add lentils
6. add chicken broth simmer until tender, about 40 minutes
7. add baby spinach until wilted

makes 12 1.5-cup servings

    Great recipe. I substituted kale for spinach and added the kale same time as lentils. Also cooked lentils a little longer than 40 mins. - 8/4/10
