Quiche; Mushroom and Ham

4 eggs2 egg whites2 cups sliced mushrooms1/2 cup finely chopped onion1/2 cup 1% milk1/4 tsp black pepper60 grams low fat cheddar, grated (approx 1/2 cup)1 1/2 cup diced, lean hamNon-stick spray (I use olive oil in a spritz bottle)
Preheat oven to 350 degrees. Lightly grease a 9" pie pan.
Spray olive oil in a non-stick pan over medium heat. Cook mushrooms and onion until done.
Meanwhile, whisk together eggs and egg whites, milk and pepper.
In pie pan, sprinkle the ham and the cooked mushrooms and onion. Pour egg mixture over top.
Top with grated cheese.
Bake for 40-45 minutes or until set. Allow to sit for 10 minutes before cutting into wedges.
