Spicy lentil Dahl (soup)

Ingredients
1 T. Sesame Oil2 cloves garlic, finely chopped1 T. fresh Ginger, finely chopped4 c. water1 c. red lentils, rinsed1 t. cumin1 t. coriander1 t. tumeric1/4 t. cardamom1/4 t. cinnamon1/4 t. cayenne pepper1 t. sale2 T. tomato Paste
Directions
Makes four 1.25 cup servings
If desired, serve with cooked brown rice or whole wheat noodles.

In a 3-quart stockpot, heat the sesame oil over medium heat. Once the oil is hot, add the garlic and ginger. Cook, stirring often, about six minutes.

Stirring constantly, add the water, lentils, spices and salt. Bring to a low boil, then turn down the heat to low, cover and let the soup simmer for about 20 minutes, or until lentils are very tender.

Stir in tomato paste. Cook several minutes more until soup is desired temperature and consistency. Add ore water if necessary. Serve hot.
