Chinese Fried Rice With Vegetables

Ingredients
4 cups cooked white rice (cold)1/2 cup chopped green onion1 large egg2 tbsp soy sauce (might need a little more)1 cup frozen peas
Directions
Cook minute rice (2cups rice, 2 cups water, for 5 1/2 minutes on high in the microwave, that way the rice isn't too soft) Allow to cool completely.

Chop green onions , and in a small bowl mix together soy sauce and egg, then saute onions in non-stick skillet (medium heat)sprayed with cooking spray for about 2 minutes. Add rice and peas, and fry for a minute, then add in the soy sauce mixture. Continue cooking for 2-3 minutes until peas are cooked.

Makes 6- 3/4 cup servings
