Curried pork tenderloin

Ingredients
1 lb pork tenderloin ( 2 half pound ones)1/3 cup apricot jam2 tsp dijion mustard1.25 tbsp curry powder1 tsp garlic powder
Directions
Preheat over to 450 degrees Line baking sheet with foil. In a small bowl mix curry, jam,garlic and mustard. Spread enough of mixture on pork to lightly coat it. Roast uncovered in oven for about 30- 35 minutes, coating with remainder of jam mixture ever 10 minutes. Cook until thermometer in 155 degrees celcius.

    This was just soooo good! A great change of pace from my regular pork dishes. If you're a low-carb eater, you can lessen the carbs even more by using sugar-free apricot jam. Yummy! - 3/15/10
