Chicken Tortilla Soup (minus Tortilla)

Ingredients
Chicken Breast, no skin, 2 breast, bone and skin removedYellow Sweet Corn, Frozen, 2 cup kernels (or 1 can)Beans, black, 2 cup (or 1 can)Onions, raw, 1/2 cup, choppedGreen Chili Peppers, canned, 1/4 cupChicken broth, less/reduced sodium, 2 cansWater, 1 cup Chili powder, 1/2 tbspCumin, 7/8 tspGarlic, 1 1/2 tspOlive Oil, 2 tbspBay leaves, 2 leavesCilantro, chopped, raw,1/2 cupToppingSour Cream, 1 tbsp per servingDiced Tomatoes, 1/4 cup per serving
Directions
In a large sauce pan, saute onion in olive oil until onion is translucent, add garlic until golden. Add the chicken broth and water next, then add the rest of the ingredients except the cilantro. Bring to a boil and then reduce to med/low heat. Cook for 15 min or until chicken is cooked and tender. Remove chicken and shred, add the chicken back to the broth along with the chopped cilantro. Cook on medium heat for another 15-20 min. Ladle into a bowl, add 1 tbsp of sour cream to the top of each serving and top with fresh diced tomatoes...Enjoy!!
