Whole Wheat Bread Machine Pizza Crust

3/4 c water1 Tbs olive oil1/2 tsp salt1 Tbs sugar1 Tbs dry milk powder1 1/4 c bread flour1 c whole wheat flour2 tsp vital wheat gluten1 tsp oregano
Makes 8 servings (16 slices).
1. Place ingredients in bread machine pan in order recommended by manufacturer. Select dough cycle.
2. Remove dough and divide into number of balls for family- or individual-sized pizzas. Cover and let rest 10 minutes. (This causes the gluten to relax so they roll out easier and don't shrink on you.)
3. Roll out circles; cover and let rest 10 minutes.
4. Roll out again. If you don't get a 14-16" circle for family-sized, simply cover the dough and let it rest again.
5. Preheat oven to 400˚F. Place one rack on bottom, one above that.
6. Place circles on lightly sprayed pizza pans (cookie sheets work for small pizza crusts), set aside to rise. When the crusts start to puff up, brush with a little olive oil, poke with a fork all over, and place in over on lowest racks.
7. When crust is puffy and light brown, remove and add sauce and topping. You can also freeze the crusts or store in fridge for later use at this point.
