jamaican brown Stew Fish

Ingredients
Ingredients2 medium red snapper, whole 1 medium onion, sliced 2 sprigs thyme 2 stalks green onions, sliced into 2-inch pieces 1/2 bell pepper, sliced 2 garlic cloves 2 tablespoons flour 1 1/2 cups water 1/4 cup soy sauce 1/4 cup ketchup 1/2 cup sweet and sour sauce 3 tablespoons vinegar oil, to fry the fish and seasonings salt and pepper, to taste
Directions
Wash the fish with a mixture of water and a little vinegar.
Dry the fish in a paper towel.
Rub salt and pepper all over the fish.
Fill a frying pan with about 1 1/2 inches of oil and fry fish on both sides till brown.
Remove fish and place in a paper towel lined plate so some of the oil drains. Set aside.
In a deep pot, saute the onion, thyme, green onion, bell pepper and garlic with a little oil.
Add flour and cook till brown.
Add water, soy sauce, ketchup, sweet and sour sauce and vinegar.
Submerge the fish in the sauce and simmer for 15 minutes.
Add pepper to taste and, if needed, salt.
Serve with rice and peas. Enjoy!

Makes 4 servings. half whole fish each.
