Sugar-Free Pearl Tapioca Pudding

Ingredients
3 cups 1% milk1/2 cup pearl tapioca1 cup Splenda No Calorie Sweetener1/2 cup Egg Beaters egg substitute1 T. vanilla extract
Directions
Combine milk, tapioca, and Splenda. Cook over medium low heat just until slight boiling; stirring constantly. Add small amount of hot mixture to egg substitute mixing thoroughly; return to hot mixture and cook 5 minutes longer or until starting to thicken. Remove from heat and stir in vanilla. Cool or serve warm.
