Smarter Oatmeal Chocolate Chip Cookies

1 stick (1/2 cup) butter1 cup unsweetened applesauce1 cup packed brown sugar5/8 cup egg substitute1/2 tsp. vanilla1 1/4 tsp. salt1/2 Tbsp. baking soda2 1/4 c. flour4 1/2 cups oats1 cup semi-sweet chocolate chips
Preheat oven to 350 degrees.
Cream together butter, brown sugar, and applesauce.
Mix in egg substitute and vanilla.
Mix together and add dry ingredients: salt, baking soda, and flour.
Stir oats in and then chocolate chips.
Use cookie scoop to place dough balls on ungreased cookie sheet.
Bake at 350 degrees for approximately 10-12 minutes.
Cool on cooling rack and store in air-tight container.
If you prefer not to bake all the cookies at once, you can freeze the dough balls in freezer bags and bake them later.
Variations include adding nuts or more chocolate chips or using white or milk chocolate chips.
Also, you can add 1/4 white sugar and/or another 1/2 cup brown sugar for more sweetness.
Makes approximately 84 (7 dozen) cookies using a small cookie scoop.
