Ingredients1 tsp olive oil1 medium onion, sliced into julienne (thin slices)2 tsps balsamic vinegar2 cups (about 1 bunch) asparagus, cut into 1-inch sections3 green onions, sliced1/4 cup fresh basil, chiffonade (cut into thin shreds)6 large eggs1/4 cup plus 1 Tbls grated Parmesan cheese1/2 teaspoon kosher saltfresh ground pepper to taste

Preheat the broiler.

On the stove, heat an oven-proof 10- to 12-inch sauté pan over medium heat. Add olive oil and onions and cook until soft and slightly browned, or caramelized, about 5 minutes.

Add balsamic vinegar and allow it to reduce to a syrup while mixing with the onions.

Add the asparagus and 2 Tbls of water and cover to steam the asparagus for 4 minutes, stirring once part way through.

Meanwhile, whisk the eggs in a medium bowl and stir in 1/4 cup of the Parmesan, 1/4 teaspoon of the salt and a few twists of fresh ground pepper.

Add green onion, basil and the remaining 1/4 teaspoon of salt to the cooked asparagus and onions. Stir to combine.
