Chicken and Wild Rice Soup

Ingredients
Chicken BreastChicken Broth (or bouillon)CarrotsCeleryOnionOlive OilWhole Grain Rice Medley
Directions
Start rice. Fry up chopped onion, chopped chicken breast, chopped celery and chopped carrots in the olive oil. When chicken cooked until no longer pink and veggies start to soften, add as much chicken stock or water as desired. Simmer until veggies are at desired consistency (30 minutes or so). When ready to serve, add rice to individual bowls of soup. This will eliminate it's tendency to absorb all the liquid.
