Hamburger Barley Soup

Ingredients
1 lb lean ground beef, (I rinsed and drained mine)1 large onion diced3 large cloves garlic, minced2 cups sliced carrots2 cups sliced celery1 large green onion, chopped4 cups low sodium, fat-free beef broth4 cups low sodium, fat-free vegetable broth1 can tomato soup2 cups water2 bay leaves1 tbsp Italian herb mixsalt & pepper to taste (I used 1 tsp. salt)
Directions
Brown beef, add all vegetables and saute until starting to soften. Add broths, soup, water and seasonings. Simmer 1 hour.

I did not actually measure every vegetable, but I measured the final result and I had 24 cups of soup.

You could, of course, add lots more veggies to this soup if you want it thicker.

16 1.5-cup servings.
