6 servings of dry rice2 - 3 chicken breasts2 cup spinach3 cans of Chicken Broth2 cloves of garlic1/4 Cup Parmesan2 T olive oil
In one large skillet coat the pan with olive oil, add the garlic letting them brown up
Add the rice to the oil and add a cup of chicken broth
Let the rice absorb the liquid and add another cup.. repeat until tender
In another large skillet coat the pan with olive oil and some minced garlic... add the spinach and cook until slightly wilted.. put in a bowl and put aside
In the same pan add the chicken cut into bite size pieces... cook through add salt,pepper,onion powder to taste... once cooked put aside
After you get two cans of the chicken broth into the rice add the spinach and the chicken... simmer until the liquid absorbs
Serve with Parmesan on top
