Chicken Brushetta Skillet

1 lb chicken breast, cut into cubes2 tsp olive oil4 cloves garlic, minced1 can diced tomatoes1 can fat free chicken broth1 tsp dried basil leaves1.5 cups white rice2 wedges Laughing Cow light swiss cheese
Brown chicken in olive oil in nonstick skillet on medium-high heat. Remove and set aside.
Add garlic, tomatoes, broth and basil to skillet and bring to a boil. Stir in rice; return to boil.
Reduce heat to medium-low; stir in meat and cheese; cover. Simmer 10 minutes, until cheese is melted and rice is cooked through.
Makes 4 servings, 1.5 cups each.
