Vegan Applesauce Cake

Ingredients
2 cups applesauce, unsweetened1 cup granulated sugar1/2 cup apple juice, unsweetened1/4 cup mild olive oil2 teaspoons flax seed meal (ground flax) 1 teaspoon vanilla1 1/4 cups whole wheat flour1 1/2 cups white flour1 teaspoon cinnamon1/4 teaspoon cloves1/4 teaspoon ginger2 teaspoon baking powder3/4 teaspoon salt1/2 cup walnuts, chopped1/2 cup dried cranberries
Directions
Preheat oven to 350 degrees. Spray a 9 X 13 inch baking pan with nonstick spray.

In a large mixing bowl combine the applesauce, sugar, apple juice, olive oil, flax meal and vanilla. Stir till thoroughly combined.

In another bowl combine the whole wheat and white flours, spices, walnuts and raisins or cranberries. Gently add to the wet ingredients and stir just until combined.

Pour into pan and bake for 35 to 40 minutes until a toothpick inserted in the center comes out clean. Remove from pan when cool.

    I made this today for my nephew's first birthday tomorrow. The changes I made were: I did not use walnuts or cranberries and I used pear juice instead of apple (just what I had on hand)
