Steel Cut Oat Pilaf

Ingredients
Directions
1 large Sweet Onion, thinly sliced1 Tbsp Butter2 Tbsp Olive Oil1 cup Oats, Steel Cut2 tsp Parsley Flakes1 pinch ground Pepper1 pinch Sea Salt1-3/4 cups Broth (Vegetable, Chicken, Beef)
Directions:
In a 10" or 12" nonstick frying pan, over medium-high heat, cook onion in butter until onions limp, about 10 minutes; stir often. Add oats and stir for 1 minute. Add beef broth.
Bring to a boil over high heat, then simmer, covered, until liquid is absorbed, about 15 minutes. Stir occasionally add parsley flakes about 2-3 minutes before oats are finished cooking. Adjust with salt and pepper if needed.
*personal note: I add toasted almonds to mine at the end for a little more crunch.
