Basic Corn Muffin

Ingredients
1 cup cornmeal1 cup corn flour (can use any kind of flour)1/3 cup fructose2 tsp. baking powder1/2 tsp. salt1 egg, beaten1/4 corn oil1 cup milk
Directions
Preheat oven to 400. Grease muffin tins. I used mini muffin tin.

In a large bowl, mix together corn meal, flor, fructose, baking powder and salt. Add egg, oil and milk; stir gently to combine. Spoon batter into muffin tins.

Bake at 400 for 15 to 20 minutes, or until a toothpick inserted into muffin comes out clean.

    I have to doubt seriously that this makes 60 servings. Maybe 6 so hopefully this is an error. I will try this because I've always wanted to make my own corn muffin batter (without the help of Jiffy). - 5/5/08
