Ratatouille (Eggplant Stew) with Chick Peas

Ingredients
1 medium eggplant3 zucchini squash1 large onion2 cloves garlic1 can diced tomatoes1 can chick peas, drained
Directions
Chop onion and garlic in small dice and saute in 1 T olive Oil until transparent in medium to large pot.

Chop remaining vegetables in 1.5" dice. Add to onion mixture and saute for 5 minutes.

Add diced tomatoes with juice and chick peas.

Simmer for 45 minutes
