Erika's Red Lentil Soup (mi-my23)

Ingredients

1 c. dry red lentils (or any type)2 small potatoes (washed and cut into bite sized pieces)1/2 large carrot (cut into bite sized pieces)1 med. onion (sliced)1 bouillon cube (vegetable)1.5c of water
*Dump everything into a crock pot.
*Fill water to cover the veg and lentils. (about 1.5 cups, but more or less depending on how thick you like your soup.)
*Turn your crockpot on HIGH heat and let set until all veg is soft and lentils are done. (usually 4-6 hours, while at work)
*Can serve as is, or whiz it until creaming in the blender and serve.
1 serving is about 1.5 cups of soup (depending on how much water you used)
