Jesse's Loaded Mixed Green Salad (srv sz 2cups)

Fresh Express - Spring Mix Salad Mix, 5 ozCucumber (peeled), 1 mediumCelery, raw, 2 stalk, large (11"-12" long)Roma Tomato, 7 ozRadish, Fresh, 4 ozPeppers, sweet, red, fresh, 1 medium (approx 2-3/4" long, 2-1/2"Scallions, raw, 1.5 cup, chopped
This is the basic "fully loaded" mixed green salad that I make all the time. By "loaded" I mean I include a lot of ingredients (sometimes more than seen here!) and they're in bigger chopped sizes. You can either layer this one ingredient at a time or toss it at the end. I usually just leave it layered. I use Fresh Express bagged mixes to start so that I have a good mix of lettuces without having extra that ends up rotting in the fridge ;)
Start by emptying the Fresh Express bag into a large fridge-friendly bowl or seal-able container (I use a Rubbermaid 1.3gal flat & square container which fits in the fridge quite nicely).
Peel (or half-peel) one medium cucumber, quarter it lengthwise, then slice in 1/4" slices and layer it onto the top of the lettuce.
I usually alternate "colors", so next up is the red pepper. I usually julienne the pepper, then cut those strips in half. Layer it.
How bout the celery next? Clean two stalks and slice 'em up. Layer it.
You get the idea. Alternate the ingredients by color, slicing or chopping in bigger bits, and you're good to go. I usually end up with the scallions on top.
Makes about 8 2cup servings.
