Summer Avocado Salad

Ingredients
Salad:1 Avocado, peeled and cut into 1" chunks1/2 Cucumber, peeled and cut into 1" chunks1 Cup Cherry Tomatoes, halved1-2 Scallions, chopped into 1/4-1/2" piecesDressing:Juice of 1 Lime1 Tbsp Fresh Cilantro, Chopped1 tsp Olive OilSea Salt, to tasteFresh Pepper, to taste
Directions
Makes 4 servings of approximately 1 Cup each.

Peel and chop vegetables into a medium-sized bowl.

In a small bowl combine dressing ingredients, and pour over salad. Mix gently but well. Serves 4 as a side dish, or 2 as a lunch salad served with crusty bread.
