Peach Glazed Chicken

Ingredients
Cooking Spray1 lb chicken breasts or chicken breast tenders1/2 cup peach preserves2 Tbsp. balsamic vinegar1 green onion, chopped1/4 tsp pepper
Directions
Coat a large nonstick skillet with cooking spray and place over medium-high heat until hot. Add chicken and saute 5 minutes on each side or until done. Remove from pan and keep warm.

Reduce heat to low. Add preserves and remaining three ingredients. Cook, sitrring constantly, until preserves melt and onion is tender. Spoon preserves mixture over chicken.

    This was really good. The only thing I didn't like was the balsamic vinegar was a little much I think, at least for my taste. I also added green peppers and sweet onion. Will definitely make again. - 2/4/11
