David Crapo's Whole Wheat Hotcakes

Ingredients
1 c Whole Wheat Flour (the more freshly ground the better)1 T Baking Powder1/2 t Baking Soda1/2 t Salt1 egg1/4 c oil1 c fat free milk1 T vinegar
Directions
Sift dry ingredients together. In a separate bowl add one at a time and beat inbetween: egg, oil, milk, vinegar. Pour wet ingredients into dry and whisk thoroughly. Add more water or flour if too thick or too runny.

Pour onto a 350 degree griddle. Turn when bubbles form and pop in the middle without filling back in. Makes approximately 12-3 Tbsp pancakes. One serving is 4 pancakes
