Crustless Quiche

1/4 cup butter1 Large onion, chopped1 cup mushroom, coarsely chopped4 oz Feta, crumbled (you can use any type of cheese you like here.1 cup egg substitute2 large eggs1 cup milk, half and half or cream (the calories are calculated using skim milk, but you can use something richer if you like.)Mustard powderPepperSaltparsleyGarlic powder
- preheat the oven to 375 F
- grease your pan with 1 tablespoon of the butter (I use an 8" square pan, but a 9" deep dish will work well too.)
- Saute the mushrooms and onions in the rest of the butter. Salt to taste.
- place the vegetables in the bottom of the pan, sprinkle the cheese over the top.
- mix the eggs, the substitute, the milk and the spices together. Whisk them until even.
- pour the eggs gently into the pan.
- bake for 30 to 45 minutes.
- allow to cool slightly, you can eat hot, cold, or room temperature.
Quiche is often served with a side of greens.
