Pork Sirloin and Potato Crockpot

Ingredients
1 lb pork loin (sirloin), fat trimmed (16oz)3 med Golden potatoes (600g)1 can stewed tomatoes, Mexican or Italian flavored (14.5oz)2 med carrots (200g)3 Bay leavesSalt and Pepper on roastClove of Garlic, crushed, chopped4 minced Green Onions, save half for garnish
Directions
Wash roast, season with salt and pepper. Wash veg, cut in 1.5 to 2" pieces. Make bed of veg in bottom of CP. Place roast, pour tomatoes over top, add a couple shakes of low sodium soy sauce. Add Bay leaves and half of the onion. Cook on high for 3 hours...or 6-7 on low. If loin is frozen, will take longer. You will know it is done when it falls apart. Serve in bowls with horseradish. Makes 4 servings.
