Raisin Bran Muffins

1.5 cups oat bran1 cup ww flour2 tbs ground flax1.25 tsp baking soda1 tsp cinnamondash of salt.75 cup non fat milk1/3 cup honey1/2 cup no sugar added applesauce1 lg egg1.5 Tbl. Olive oil1.5 tsp vanilla extract1 cup raisins.
Makes 24 mini muffins.
mix all dry ingredients together. In a separate bowl mix all wet ingredients. Make a well in dry mixture and slowly add liquid. Stirring but do not over mix. Once blended add raisins. Spoon 2 TBL of batter into each prepared muffin cup. Bake 8-10 min at 400 degrees or until the muffin springs back up when gently pressed. Cool in tin for 10 min and then remove. They freeze well.
