Oatmeal Apple Raisin cookies

Ingredients
1 cup oats1/2 cup chopped pecans, or walnuts1 cup whole-wheat flour1/2 teaspoon baking soda1/4 teaspoon baking powder1/4 teaspoon salt1/2 teaspoon ground cinnamon1/4 teaspoon ground nutmeg2 large egg whites1/2 cup shredded peeled apple1/2 cup brown sugar1/4 cup prune puree (apple butter works too)3 tablespoons granulated sugar2 tablespoons canola oil1/2 teaspoon vanilla extract1/2 cup raisinsextra cinnamon/sugar for topping
Directions
Preheat oven to 375.

Combine all ingredients. Mix well.

Grease cookie sheet. Drop by teaspoonfuls onto cookie sheet. Sprinkle with cinnamon sugar. Bake about 8 minutes. Cookies will be cake-like. Cool on wire rack.

Makes about 3 dozen cookies.

You can also add any dried fruit you like as well as or instead of raisins.
