Ingredients
3 egg yolks2 c olive oil1 tsp salt1 tblsp vinegar1 tsp crushed/ground mustard seed
Directions
set the olive oil aside, combine the other ingredients in the blender. blend on low speed for 3 seconds then begin adding the olive oil. Go slowly and stop when the emulsion is the thickness you desire. You will most likely have oil left.
If you add too much oil too quickly the emulsion will die and you must begin again or add more yolks.
