Oatmeal Raisin Muffins

Ingredients
1 cup whole wheat flour 1 cup rolled oats 2 teaspoons baking powder 1/2 teaspoon baking soda 1 teaspoon ground cinnamon 1/2 teaspoon salt 1 egg, beaten 1/2 cup milk 1/4 cup canola oil 1/2 cup sugar 3/4 cup Raisins
Directions
Preheat oven to 425 degrees F (220 degrees C). Grease 12 muffin cups.
In a large bowl, mix flour, oats, baking powder, baking soda, cinnamon and salt. In a separate bowl, whisk together egg, milk, oil and sugar. Mix in raisins. Stir raisin mixture into oat mixture just until evenly moist. Spoon into 12 prepared muffin cups. Fill to 1/4" from the top.
Bake 15-18 minutes in the preheated oven, until a knife inserted in the center of a muffin comes out clean.

    I liked these alot! I used plain soy milk instead of nonfat milk to add a little more protein and I also used half sugar/ half splenda to sweeten them. - 11/9/08
