Mock Rick Pudding

Ingredients
1 egg beaten until frothy1/3 cup lowfat 1% cottage cheese1/2 cup crushed pineapple drained and juice pressed outSplenda to taste - about 1 - 2 t - or another sweetener that can be used to bake with Dash of cinnamon
Directions
Stir beaten egg in with cottage cheese, pineapple and sweetener. Pour into a custard cup and set in a small pan of water. Sprinkle with cinnamon before baking.

Bake at 350 degrees for 20 minutes.
