3 boneless, skinless chicken breasts (1.79lb raw)2 medium potatoes, quartered lengthwise6 cloves garlic, minced3/4 c. low sodium chicken broth1/4 c. olive oil1/4 c. lemon juice2 tsp oreganoSalt & Pepper to taste
Preheat oven to 400 F
Arrange chicken & potatoes in 9x13 glass baking dish
Season with salt & pepper
Pour broth over
Whisk oil, lemon juice and oregano & pour that over chicken
Bake 30-35 min til chicken is cooked through and golden brown, and potatoes are tender.
Makes 4 servings.

This was FANTASTIC! Both my husband and I really enjoyed this. I did find the cooking time to be somewhat off, but that could be my oven or the size of potato I used. It took 1 hour to cook and reduce the sauce/marinade and for the potatoes to brown nicely. Thanks for the great recipe! - 1/16/11
