Chocolate Chip Meringue Drops

2 large egg whites1/2 cup sugar1 tsp vanilla extract3 tbsp cocoa powder1/2 cup semisweet chocolate chips
1. Preheat the oven to 250F. Line 2 baking sheets with baking parchment or aluminum foil and set aside.
2. In the large bowl of an electric mixer, beat the egg whites at moderately high speed until they hold stiff peaks. Beat in the sugar, 1 tablespoon at a time, then beat in the vanilla extract. Reduce the speed to low and beat in the cocoa powder. With a rubber spatul, fold in the chocolate chips.
3. Drop the mixture by rounded teaspoonfuls onto the baking sheets, spacing the cookies 1 inch apart, and bake for 1 hour. Turn off the oven and dry the cookies in the oven 2 hours longer. Remove them and store in an airtight container. Makes about 40 cookies.
