1 cup chopped onion1 cup diced green pepper1-2 cloves minced garlic4 ounces extra lean ground beef1/4 cup raw rice1 (14.50z) can diced tomatoes1 cup tomato sauce1 cup V-*8 juice4 cups beef broth1 teaspoon pepper
Spray large saucepan with cooking spray and saute the onion and green pepper until they soften. Add garlic and ground beef. Cook until no longer pink. Add rest of ingredients and bring to a boil. Turn heat to med. low and simmer until rice is cooked, stirring occasionally. Makes 6 1 1/2 cup servings.
