Low Fat Cinnamon blueberrry coffee cake

* King Arthur Unbleached All-Purpose Flour, 2 cup * Baking Powder, 1 tsp * Baking Soda, 1 tsp * Cinnamon, ground, 1 tsp * egg white, fresh, 3 large * Olive Oil, 2 tbsp * Granulated Sugar, 1/2 cup * Brown Sugar, 1/2 cup, packed * Low Fat Sour Cream, 6 oz * Stonyfield Fat Free Fruit on the bottom Blueberry, 6 oz Topping * Brown Sugar, 1/2 cup, packed * King Arthur Unbleached All-Purpose Flour, 1/2 cup * Old Fashioned Quaker Oatmeal- Plain 1/2 cup * Cinnamon, ground, 1 tsp * Butter, salted, 2 tbsp
Directions
1. Preheat the oven to 350 degrees. Spray a 9 x 13" pan with non stick cooking spray and set aside
2. Combine flour + baking powder + baking soda and Cinnamon. Set aside
3. Place egg whites in a large bowl, add oil, sugars (both) and sour cream. Mixing well.
4. Quickly stir the flour mixture into the sour cream misture, mix just until thoroughly moistened. Spread the batter into the prepare pan.
5. Combine all the topping ingredients. Mix it using your finger tips (make sure that butter is room temperature).
6. Sprinkle the topping on top of the batter in the pan.
7. Bake about 35 minutes. Test by inserting a sharp knife into the center of the cake. If it is come out clean it is done.
For more blueberry flavor add 1/2 cup dried blueberries or increase flour to 2 1/4 cups and add 1/2 cup fresh or thawed/drained frozen blueberries. make sure to recalculate the nutritional info with the added ingredients.
