Mini Pumpkin choc. chip Muffins

1 2/3 cup whole wheat white flour1/3 cup ground flax meal1 Tbsp pumpkin pie spice1 tsp baking soda3/4 tsp salt1/4 tsp baking powder1 cup sugar2 large eggs1/2 cup vegetable oil1 cup canned pumpkin1 cup semisweet mini choc. chips
Heat oven to 350
Mix dry ingrediants with a wisk or fork and set aside. In a large bowl, beat with a spoon or electric mixer sugar, oil and eggs. Mix in pumpkin. Fold in dry ingrediants, then add chocolate chips. Spoon into mini muffin pan that has been sprayed with nonstick oven spray. Bake 13 to 15 minutes. Let sit in pan for a few minutes, then turn out onto wire rack. Should make at least 48 mini muffins.
Original recipe calls for 1 1/2 cup sugar, white flour and no flax sead meal - I've changed these in the above recipe with good results.
These muffins freeze well, and recipe can be doubled.
