Buttermilk pancakes

King Arthur Unbleached All-Purpose Flour, 2 cup Baking Powder, 1-1/2 tsp Baking Soda, 1 tsp Granulated Sugar, 2 tsp Sea Salt, 1/2 tsp Egg, fresh, 2 large Butter, salted, 4 tbsp Oakhurst Fat Free Buttermilk, 2 cup
Mix together dry ingredients. Melt butter and cool too room temp. Add eggs to butter and beat well. Make a well in the center of the dry ingredients and pour in eggs/butter and buttermilk. Mix with a few swift strokes.... do not over mix it makes for rubbery pancakes. The batter will become bubbly as it sets and will be very thick.
Heat griddle on medium and grease with a small amount of butter, olive oil or non stick spray (not calculated into this recipe). Add about 1/3 cup batter to pan, cook on one side until slightly bubbly, flip and cook until golden.
Makes approximately 12 pancakes.
